Lobby Bar and Bistro BIOs Bob Amick, Owner and Founder: Concentrics Restaurants Todd Rushing, Partner John Fletcher, Executive Chef Concentrics, Development Partner John Fletcher Executive Chef John Fletcher brings 31 years of restaurant experience to the kitchen at Lobby Bar and Bistro. A Seattle native, Fletcher’s daily motivation is the enjoyment he experiences from bringing pleasure to others through food and his desire to “feed everybody” whether it be in the restaurant, at home entertaining or in the community. Fletcher started his career as a bus boy and pastry assistant at 15 years old. From there, he joined the Navy to attend cooking school. After he tenure in the Navy, Fletcher joined the team as Chef in Hell’s Kitchen at The Improv, located in Los Angeles, CA. From there, he took a position as a line cook at Ma Maison. Here, he took complete interest in the technique, presentation and passion for cooking he saw from other Chefs in the kitchen at Ma Maison. Fletcher relocated to Knoxville, TN where he established himself as a known local Chef while leading the kitchen at Lucille’s Jazz Club. He was also recruited to open various restaurants and developed menus for a number of establishments in the Knoxville area. In 2009, Fletcher landed in Atlanta where he joined the Concentrics Team. He now heads the kitchen at Lobby Bar and Bistro. When not in the restaurant, Fletcher enjoys studying martial arts, flying RC planes and spending time with his 12 year old White Sheppard “Lance.”
